Another day, another food challenge. As you know from my post last night, I am doing a challenge where I use up all the food in my house before doing a major food shopping. The only things I am allowing myself to buy are coffee creamer, eggs and milk. I added the last two as things I am allowing myself to buy because they are needed to use up the pancake mix in my house.
Anyway, today’s meal is quite simple as well. I actually cooked it the other night and am eating the leftovers tonight. It was another ‘pantry/freezer/fridge’ clean out meal and took only 30 minutes to cook in my instant pot. (It took a bit longer since I used frozen chicken.)

I did make a few changes. I swapped out the olives for refried beans since I didn’t have olives and used flour tortillas instead of the corn ones.
I topped the meal with sour cream and avocado.
The best part is I have enough to last me a few meals, which means less cooking and more time doing other things!
