Hello again! Today is day 3 of my 30 food challenge of not buying anything (save for the staples mentioned in my previous post) and finishing out what is in my house. It is not easy, and yes, it is tempting to go out and buy food, but I am determined to finish this challenge.
Last night, I cooked up some pierogis that I had in my fridge to use for lunches this week. I am still working on what to pair it with, but my thoughts as of right now are to use the frozen spinach in my freezer and/or whatever meat is in there.
As for dinner, the plan is to finish up the leftovers in my fridge. I have the rest of the enchilada casserole, which I plan on pairing with my last avocado and the rest of the sour cream.
I am finding that my biggest challenge is finding lunches to bring to work. I usually work an 11-7 shift, which makes it a weird time to eat. I’m already full from breakfast, but then find it hard to eat later in the day because I am not hungry for dinner until later at night. This is something I need to work on, not only with this challenge, but in general.
I am only on day 3, but so far I am loving this and having fun being creative! I can’t wait to share more with you throughout the month.
